Pepper Jack & Tomato Grilled Cheese (Printable)

Spicy, melty sandwich with pepper jack cheese and fresh tomato slices on jalapeño bread.

# What You’ll Need:

→ Bread

01 - 4 slices jalapeño-studded bread

→ Cheese

→ Vegetables

03 - 1 medium ripe tomato, thinly sliced

→ Spreads & Fats

04 - 2 tablespoons unsalted butter, softened

05 - Pinch of salt
06 - Freshly ground black pepper

# How to Make It:

01 - Lay out all bread slices on a clean work surface. Spread softened butter evenly on one side of each slice.
02 - Place two bread slices butter-side down. Arrange 2 pepper jack cheese slices on each, followed by half the tomato slices. Season tomatoes with salt and pepper to taste. Top with remaining bread slices, butter-side up.
03 - Preheat a large nonstick skillet or griddle over medium heat for 2 minutes.
04 - Place sandwiches in the hot skillet. Cook for 3–4 minutes per side, pressing gently with a spatula occasionally, until bread turns golden brown and cheese melts completely.
05 - Transfer sandwiches to a cutting board. Let rest for 1 minute, slice diagonally in half, and serve immediately while hot.

# Expert Advice:

01 -
  • The spicy kick from the pepper jack pairs perfectly with sweet, juicy tomatoes
  • Jalapeño bread adds an extra layer of heat without being overwhelming
  • Ready in under 15 minutes but tastes like something from a diner
02 -
  • Medium heat is your friend. Too high and you'll burn the bread before the cheese melts.
  • Don't overcrowd the pan. If your skillet is small, make one sandwich at a time for the best results.
03 -
  • Use a mandoline for perfectly even tomato slices
  • Grate some extra pepper jack on top of the tomatoes before closing the sandwich for maximum cheese coverage
